Harmonizing wines and zodiac signs? Yes! And I still love this idea.

In 2011, I found a report that stuck with me: “Sommelière Cecília Aldaz harmonizes wines and signs.” I cut it out and saved it. More than ten years later, I’m still enchanted by the concept — because, let's face it, grapes have personalities as distinct as the signs of the zodiac.

And if the topic is pleasure, beauty, and sensory intensity, it's impossible not to think of Taurus.

🍷 Taurus's Grape? MERLOT!

Taureans have a deep connection with the world of the senses. They love touch, aroma, flavors, and, of course, beauty. They value comfort, security, and everything that is made to last. Are they stubborn? Yes. But it's this consistency that makes them reliable, steadfast, and absolutely enchanting.

The Merlot grape represents all of this masterfully.

Originally from France, it prioritizes sophistication, charm, and a certain seductive introspection. It enjoys attention, and when it receives it, it delivers depth and elegance. It's a grape that knows what it has to offer. True to its style, it doesn't easily bend to trends. Just like Taurus, Merlot isn't in a hurry. It prefers to mature calmly, in its own time.

🌿 What is wine made with Merlot like?

According to the Wine Folly Essential Guide to Wine, Merlot produces a medium-bodied red wine with prominent aromas of red fruits, such as plum and cherry.

It's called a "gastronomic wine" precisely because of its versatility: it pairs well with various dishes, without stealing the spotlight, but also without disappearing into the background. A true companion at the table.

Delicate, yet with presence. Elegant, yet welcoming. Exactly like the Taurean who appreciates each sip calmly, making the moment memorable.

🍇 The Merlot Production Process

Just like the energy of Taurus, Merlot requires care and patience:

  1. Manual harvesting and selection of the grapes

  2. Destemming and gentle pressing

  3. Alcoholic fermentation with temperature control

  4. Malolactic fermentation to soften acidity

  5. Aging in oak barrels (often!)

  6. Filtering, bottling, and... time to toast life with elegance

🌸 Wines That Speak to the Taurean Soul

Taurus teaches the pleasure of presence. Of savoring slowly, of living with consistency, and of cultivating what truly matters. Merlot does too.

It enchants.

And you? Did you feel that this wine has everything to do with your sign?

Tell me in the comments — I'd love to know! 🥂

With love,

Kim Bins
