Pisces Wine: Sensitivity, imagination, and delicacy in the glass

Pairing wines with zodiac signs? Yes! This is one of those connections that has continued to enchant me over the years.
I remember seeing a report back in 2011 titled “Sommelière Cecília Aldaz pairs wines and signs.” I clipped it and saved it. Ten years later, I still love the idea that grapes also have personalities. Some are expansive, others discreet; some are intense, others almost ethereal. Just like the signs.
Today is the day to talk about Pisces, the sign of sensitivity, imagination, and connection with the subtler dimensions of life.
♓ The Pisces Grape? GODELLO!
Pisceans profoundly feel the world. They are intuitive, empathetic, and often seem to live between two realities at once. They possess a fertile imagination and a natural ability to understand the feelings of others.
This delicate and mysterious atmosphere also appears in the Godello grape.
Originating from Galicia, Spain, this white grape has a discreet personality that doesn't reveal itself immediately. It needs time to show its layers. At first, it may seem reserved, but it gradually reveals a surprising delicacy.
Much like Pisces, Godello has something surreal about it. Sweet notes appear with subtlety, the texture is smooth, and the wine opens up slowly, inviting the taster to slow down and observe.
🍷 What is wine made from Godello like?
Wines produced with the Godello grape are typically elegant whites with good structure and aromatic delicacy. They are not "explosive" in perfume but reveal their complexity over time.
To fully appreciate them, a few details make a difference. Unlike many white wines, Godello should be served slightly less chilled, between 12°C and 14°C, allowing its aromas to emerge more clearly.
Another interesting detail is that it can be decanted—something uncommon for white wines. This contact with air helps the wine "breathe" and reveal its full personality.
It pairs beautifully with delicate dishes, seafood, fish, light risottos, and preparations where the subtlety of flavors deserves to be preserved.
🌊 A wine with a Piscean soul
Pisces reminds us that not everything needs to be immediate. Some experiences require silence, time, and sensitivity.
So does Godello. It reveals itself little by little, with softness and depth. It is a wine that doesn’t shout. It whispers.
