It was back in 2011 that I came across a report that has stayed with me to this day: “Sommelière Cecília Aldaz pairs wines and signs.” I clipped it, saved it, and more than a decade later, I still believe that grapes, just like signs, carry identity, temperament, and even a purpose. And when we talk about Capricorn, we are talking about silent excellence.
🐐 The Capricorn grape? PINOT NOIR!
Capricorns are discreet, yet absolutely powerful. They have a deep relationship with time, effort, and the construction of something worthwhile. They value hierarchy, recognition, and consistent results. They are demanding of others, but especially of themselves. And the Pinot Noir grape moves exactly in this frequency.
Originating from Burgundy, France, it is one of the most respected grapes in the world. Not because it imposes itself, but because it demands respect: it is delicate, sensitive to climate and soil, but when well-tended, it delivers wines of extraordinary quality. Its structure is subtle and precise. Its presence is light, yet striking. Much like Capricorn, Pinot Noir doesn't make a fuss, but it leaves its mark with elegance.

According to the Wine Folly: The Essential Guide to Wine, Pinot Noir produces light-bodied, translucent red wines with moderate to high acidity, standing out for their fragrant and fresh aromas, such as red fruits, flowers, spices, and earthy hints.
Being a subtler wine, it is ideal when served in large-bowled glasses, which help release its complex aromas. On the palate, it is soft and lively, with an impressive persistence, yet without aggressiveness. And just like the great works of Capricorn, it improves with time.
It is the perfect match for refined and delicate dishes: risottos, roasted poultry, mild cheeses, and mushrooms make excellent companions.
